Soy Poached Chicken w/Lemongrass Rice & Edamame

We absolutely LOVE this dish!! Deep umami flavours of chicken thigh poached in fragrant lime leaf, ginger, coriander root & tamari with the added sweetness of baked red onion wedges. Finished with blanched soy beans, coriander, red chilli shards and spring onion greens on a bed of lemongrass infused steamed brown rice - there's a reason why this one sells out quickly!

Preparation and storage notes

Microwave: Heat defrosted meal in 1-2 minute increments until evenly hot throughout.
Stovetop: Transfer contents into a saucepan or wok, place on tthe stovetop and reheat over medium heat, stirring until heated evenly throughout.
Oven: Transfer contents into an ovenproof dish and cover with foil. Place into a preheated 180oC oven and reheat for 15-20 minutes, removing cover for last 5 minutes of heating.
