Malaysian Chicken Satay - it is traditional - different to the Satays we mostly know on a stick with a peanut sauce on the side, the chicken has been marinated for 24 hours in a hand made spice blend and then char grilled and simmered slowly in a decadent hand made satay sauce - the sauce has all of the traditional flavours is built tho on a base of slowly sautéed vegetables - you can't see them, you can't taste the difference from the original sauce (this is the tricky balancing act in play) ...your body tho gets all of the benefits. No additives, no preservatives ....wholesome ingredients coming together in a beautiful meal. You just need to add rice (and a cucumber salad would be perfect)
The recipe is based on one of my favourite Greek restaurants – Hellenikas, it is delicious, tender, savoury and sweet. Comes ready to hit the BBQ or Pan, pop onto a platter in the centre of the table and enjoy. Comes with Pita
Not your everyday butter chicken, made on a hidden base of vegetable puree - it hits all the expected creamy and mild flavour notes of butter chicken with a big nutrition hit of zucchini, broccoli and spinach. Free range chicken thigh is marinated in Greek yoghurt and spices, then grilled and added to a rich sauce with a home-made curry mix for a slow flavour-making cook. It doesn’t get any better.

Vegetarian
The flavours are amazing, packed with ‘green goodness’. Walnuts offer significant anti-oxidant and anti-inflammatory benefits, when combined with the goodness of basil, spinach, parsley, lemon, garlic, broccoli, parmesan and more the flavours are also fresh and vibrant. The great thing about this pesto – it doesn’t even require heating simply defrost and stir through hot pasta and you will have a perfect dinner ready in minutes. Pesto is great to have on hand, perfect on pizza, with a steak or as a spread or dip for crudites.
Braised Butter Beans are a delight to eat, healthy and versatile. A healthy vegetarian main with rice, alongside a roast or sausages, and delicious with eggs and bacon for breakfast.

This curry is much loved by my clients...and it is ...health in a bowl - soothing, easy on the gut, nutritious and mild in flavour. Red lentils, ginger, red onion, butternut pumpkin, zucchini, vegetable broth, coconut milk, coconut oil, cardamon pods, turmeric, Kashmiri chilli, nigella seeds, brown mustard seeds, curry leaves, sea salt, white pepper.
These are based on a Bill Granger recipe and an absolute favourite in our home. Simply defrost and cook - add avocado salsa and bacon if desired for a delicious brunch.
This dish is a favourite from my very first menu and it is health in a bowl, loved equally by kids and adults, vegetarians, pescatarians and omnivores, add in Ayurvedic and I think it covers everyone. It’s simply delicious. Yellow split peas, brown rice, ginger, 7 healing spices, stock, broccoli, zucchini, spinach.
Many steps build the flavour in this dish, sun dried tomatoes, onion and garlic are slowly sauteed until golden and sweet, then blasted to create a flavour filled puree, fresh sage leaves are cooked in brown butter until crisp, butternut pumpkin is roasted until caramelised – it is then all bought together with crème fraiche and seasoned to perfection…it is satiating, rich but not too rich…. …ready to be finished with a grating of parmesan and some roasted walnuts if desired. A perfect weeknight dinner, vegetable-based and a favourite in our home. GF (sauce only). Replace pasta with GF pasta to make a complete GF meal.
Beef
A favourite from the very first week - prepared with grass fed beef on a base of vegetables, red lentils, black beans and kidney beans - this dish is versatile - tacos, burritos, nachos, chilli con carne - packed with nutrients and fibre. Grass-fed beef, onion, zucchini, carrot, celery, tomato, red capsicum, red lentils, kidney beans, black beans, coriander, olive oil, spices, salt and pepper.
A work of love, a nutrient rich filling of beef, herbs, organic broth and vegetables (loads of spinach) is slowly cooked, then cooled and used to hand stuff cannelloni shells. The shells are layered in a pan and covered with a rich and flavoursome Napoli Sauce, sprinkled with fresh mozarella and parsley...and snap frozen ready for you to enjoy - freezer to oven ...and dinner is served.
Grass-fed beef has been marinated and slowly cooked in Lou’s Mexican Spice Mix, then combined with beans, corn and hidden greens, wrapped in tortillas and layered with Enchilada Sauce and topped with cheese……yes….a lot of steps …for me…for you….take out of the freezer, place in the oven and enjoy.

Slowly cooked over 12 hours, red wine, beef, pancetta, a mix of vegetables, Mutti tinned tomatoes and herbs are slowly braised and reduced to create this rich, healthy and indulgent bolognese - serve with pasta. it is versatile, it is rich in nutrients, it has taken hours – the work has been done for you. A beautiful easy meal – ready for the oven – grass-fed beef, herbs, spices and vegetables have been braised for hours and then topped with a generous layer of seasoned mash – simply add a salad or green vegetables on the side.– whole foods, protein, fibre, nutrients and flavour – there are over 14 plant-based ingredients building the flavour and nutrient profile of this delicious curry. I use free-range pork in a chef's recipe and the flavours are authentic and moreish – a favourite in Chinese Cuisine – and ready for you to heat and enjoy. Steamed rice makes a perfect easy nutritious meal.

The original recipe is from the River Café Cookbook, I have increased the nutrition profile with hidden vegetables and retained the decadent rich flavours.
