This is my version of this classic sauce, it is rich and delicious and nutrition packed with slow raised vegetables that dissolve into the sauce and sit behind the beautiful lamb flavours. The ragu comes with Rosemary Pangrattato to finish the dish – and you will want this on everything once you’ve tried it! Dinner doesn’t get any better on a cold night!
