Butternut Pumpkin, Burnt Butter and Sage Pasta Sauce
Many steps build the flavour in this dish, sun dried tomatoes, onion and garlic are slowly sauteed until golden and sweet, then blasted to create a flavour filled puree, fresh sage leaves are cooked in brown butter until crisp, butternut pumpkin is roasted until caramelised – it is then all bought together with crème fraiche and seasoned to perfection…it is satiating, rich but not too rich…. …ready to be finished with a grating of parmesan and some roasted walnuts if desired. A perfect weeknight dinner, vegetable-based and a favourite in our home. GF (sauce only). Replace pasta with GF pasta to make a complete GF meal.
