Beef Rendang Curry with Coconut Rice FODMAP

Rendang is a rich and tender coconut beef curry that is a popular in Malaysia, Indonesia and Singapore. This dish is often served at ceremonial occasions to honour guests. I make this dish more wet than dry and it does have a kick to it. This is one of my all time favourite curry to eat.
