The subtle taste of fennel weaves its magic through the broccoli & chickpeas blended into a silky smooth soup with a dash of Tabasco. Great for those of us watching our waistlines as well! Try adding some goat's cheese to it at home and some warm crusty buttered sourdough.
Lamb and mint are the perfect matches. We cook our lamb shoulder overnight so the meat just falls apart in your mouth. Add in grains and pulses that soak up all the middle eastern flavours, and it becomes a very filling meal that makes you feel so very comforted. You won't want to share it with anyone.
Pea and ham soup is a delightful combination of tender split peas, smoky ham, vegetables, and aromatic seasonings. Its comforting smokey taste and hearty texture make it a favorite choice for many during colder months or whenever a warm and nourishing dish is desired. Always love the smell of this soup as it brings back childhood memories of mum making it on the old wood stove top. To reheat, open stand-up pouch, place it in microwave, heat it on high until steaming hot. Allow to stand 2mins before serving. Contents may be hot. Alternatively place contents in a saucepan on the stovetop, bring to a simmer for 5 mins, and allow to stand 2 mins before serving. Don't forget to stir!
Colcannon is derived from the Gaelic “cal ceannann,” which translates to white cabbage. It is a rustic and simple Irish side dish and consists of kale or green cabbage, potatoes, butter, milk, garlic, onion, and thyme. I think it is the perfect start to our winter soup season.
