The Big Holiday Menu
View this week's NEW menu of everchanging flavoursome dishes inspired by the season. We have a focus on great taste, health and nutrition. We make from scratch using whole foods with all meals LOW GLUTEN. All meals delivered fresh not frozen easy to reheat and eat.
Individual Ready-Meals
Hunters Chicken is a rich tomatoey broth with chicken thighs and legs with vegetables braised for hours until fall off the bone tender. With a salty pop of capers and anchovy, this is a meal perfect for a cold summer night. Served ready to heat with basil and spinach mashed potatoes.
Butter is good. Chicken is great - the combination of words has no bearing on this Indian classic. Juicy marinated chicken thighs and simmered in a rich tomato and cream sauce.
Tender and fall-y apart-y beef cheek slow cooked in home-made bone broth, aromatics and so much red wine UB40 wrote a song about it. Some people get fancy with beef cheek, but they shouldn't. I serve this with a big whack of buttery mas that is made healthy(ish) by the addition of sinach and basil.
Individual Vegetarian Ready-Meals
A modern riff on a French classic. Portabellos mushroom, with a slug of wine, vegetables and a little cheeky miso for extra umami. Served in a single serving size pack with rich and creamy basil and spinach mashed potatoes.
Loaded with veggies and with the heat of a warm summers day (not too spicy). This curry is a classic Asian staple in our family. With large chunks of fresh pineapple and pumpkin to balance the salty, sour tamarind & coconut broth. Green beans and cashew nuts bring colour and texture.
If the Cannnucks had spent less time fighting over hockey pucks and more time inventing stir-fries, then they'd probably end up with something like this. Thankfully I've done the work for them. You're welcome you hosers!! I added the brown rice to make this an easy heat and eat meal for 1
Sweet and fluffy pumpkin is studded with slow roasted butternut then stuffed into caneloni (pasta tubes and then cooked out in our own tomato sauce. Plenty of texture and flavour that makes this a great main dish for vegans and normal, regular people alike!

I learned to cook a meat sauce from a ball breaking Italian. It's fitting that Sophie has been wanting to feature a lasagne on the menu and has been breaking my balls ever since. I use better ingredients and more of them.. and the skills hard won in an unforgiving Italian kitchen.

The secret? Manifesting a thick bechamel studded with sheep cheese on top giving this version a rich and tangy layer that perfectly complements the smokey eggplant, tomatoes, and meat sauce. Also well cooked potato "chunks" a technical term for a very cheffy cut all makes for a dish that is hearty but not slip sloppy.

I've replaced the meat for mushrooms in this version of a classic Greek Moussaka. I call it Classic Greek. they probably wouldn't. But what do the Greeks know about classics anyway?? potatoes and grilled smokey eggplant cooked in a rich tomato sauce and covered in a thick white sauce studded with Greek feta.

A dish that is full of nutty flavour and healthy greens and covered in a velvety smooth cheese sauce and grilled to perfection. The rice binds all of your favourite greens together in one big healthy union that is promptly made even better-er by the addition of cheesy cheese sauce.
Large pieces of fresh pineapple and pumpkin cooked out in a (not too) spicy coconut broth. With the addition of green beans and cahsew nuts this is a meal as delish as it is healthy!!
Soups & Dips
If you don't feel better after a bowl of this then see a doctor immediately. Red lentils, long known for their health benefits, making you stronger and more attractive, with sweet potato the "king" of tubers. Blended with coconut milk and garnished with pistachiofor a touch of the fancy.
Americans! Am I right?? In a riff on the classic Cream of Broccoli soup (which the very mention of, had people gagging) this creamy broccoli and cheese is a special soup that has to be tasted to be believed. A great summer soup, light and bright, complimented with the sharp tang of cheddar cheese!!
Sides
Thick wedges of potatoes baked with Mozzarella, cream and Parmasen - the only better way to compliment your main course is to admire its new hair do and ask if it's been working out.
Its a classic tale of humble mash meets butter but.... plot twist!! This butter has lead a life of fear and resentment burnt by past lovers and friends.
