SNACKS
This dreamy recipe comes from my mum Wendy. Rich & creamy with a kick from Grand Marnier & orange zest. Serve with fresh baguette or crackers & cornichons with drinks.
Sicilian "sweet & sour" vegetables. Delicious on bruschetta / baby gem lettuce to serve with drinks. Toss through pasta either hot or cold. Serve with fish, chicken, pork or beef. Freezes well so great to have on standby when guests pop in.
Roasted red peppers are whipped up with feta & ricotta cheese & a hint of chilli & smokey paprika. Addictive with crackers or spoon over fish, chicken & vegetables.
Delicious with crackers & raw vegetables. Or use as a sauce for pasta, dollop on vegetables, fish or chicken.
So versatile, especially when entertaining. Serve on crostini, toss through pasta, spoon over fish, chicken, vegetables or add to a cheese board.
Get the party started with these tasty rolls. Great to have on stand by in the freeze, just bake from frozen for 30 minutes.

SALADS
Carrot & beetroot is roasted with aromatic za'atar spice, then tossed with lentils, chickpeas, currants, walnuts, greens & pomegranate seeds. With a side of whipped feta, pomegranate & preserved lemon dressing.
A lighter twist on a classic, dressed in Greek yoghurt & dijon mustard mayo with free range eggs, capers, dill, parsley, gherkins & celery. Fabulous with ham, seafood, beef, chicken or just on its own.
Fresh broccoli is shaved then tossed with cranberries, pecans, pepita seeds, hint of orange zest & pickled Spanish onion. Served with a simple citrus vinaigrette on the side.
Fresh seasonal crisp vegetables are shredded to make this healthy light & colourful slaw. With a bright & zingy dressing on the side of fresh coriander, lime juice & chilli plus extra crispy onions, sesame seeds & peanuts.
This festive Italian salad screams summer to me. Light, yet bursting with flavour from the roasted red peppers, olives, tomatoes, cannellini beans & my home made basil pesto dressing. Delicious was a side to fish, chicken, ham, beef or simply on its own.
