SICILIAN CAPONATA
Sicilian "sweet & sour" vegetables. Delicious on bruschetta / baby gem lettuce to serve with drinks. Toss through pasta either hot or cold. Serve with fish, chicken, pork or beef. Freezes well so great to have on standby when guests pop in.
Ingredients
Eggplant, Capsicum, Tomato passata, extra virgin olive oil, Celery, vinegar red wine, Onion, Sugar, green olives, Currant, Pine nut, capers, Garlic, Chilli, Sea salt, Pepper.
Preparation and storage notes
Store in the fridge, can be frozen down. Serve with crostini / lettuce cups. Toss with pasta or dollop over chicken / fish / beef / pork.
