ROAST BEETROOT SALAD WITH ZA'ATAR & WHIPPED FETA
Carrot & beetroot is roasted with aromatic za'atar spice, then tossed with lentils, chickpeas, currants, walnuts, greens & pomegranate seeds. With a side of whipped feta, pomegranate & preserved lemon dressing.
Ingredients
Chickpea, Brown lentils, beetroot, Carrot, Greek yoghurt, Feta cheese, lemon, preserved, Rocket, walnut, Currant, Pomegranate molasses, pepita & sunflower seeds, lemon juice fresh, extra virgin olive oil, Za'atar, Sea salt, Pepper, pomegranate seeds.
Preparation and storage notes
Store in the fridge until ready to serve. Then pour the preserved lemon yoghurt dressing over your serving plater & topple the salad over.
