TUSCAN BEAN SALAD
This festive Italian salad screams summer to me. Light, yet bursting with flavour from the roasted red peppers, olives, tomatoes, cannellini beans & my home made basil pesto dressing. Delicious was a side to fish, chicken, ham, beef or simply on its own.
Ingredients
cannellini bean, roasted Capsicum, Tomato, Spanish onion, green olives, Kalamata olives, basil pesto (extra virgin olive oil, pepita & sunflower seeds, Almond, Garlic, Parmesan cheese, Lemon, fresh parsley, fresh basil, Sea salt, Pepper), Parmesan cheese, fresh parsley.
Preparation and storage notes
Store in the fridge until ready to serve. Then toss gently with the basil pesto dressing & place on serving platter.
