Cooksmith's Fortnightly Menu 12/12/24
This will be our last menu before Christmas, so if you'd like to order some meals for your freezer over the January break please do so. We have some favourites on our menu this fortnight, everything from the Beef Lasagne and Shepherd's Pie to the Italian Chicken and Vegetarian Moussaka plus plenty more.
Dinner
We use free range chicken thighs which are marinated in fresh herbs from our Kitchen Garden garlic and olive oil. They are then pan fried and finished in the oven with roasted veggies, passata, olives, feta and rosemary. This meal is delicious and can be served on it's own or with potato, rice or pasta .
Our homemade Beef Lasagne is so easy, versatile and tasty. It's a meal the whole family can enjoy. It's perfect served with a side salad or vegetables and crusty bread.
Our Vegetarian Moussaka is wholesome and packed full of flavour with red lentils, capsicum, zucchini and spices. It is layered with roasted eggplant and has a greek yoghurt, free range egg and parmesan topping. It is definitely one of my favourites.
Our Shephards Pie is packed full of flavour and the creamy mash topping with homegrown chives completes the dish. It's so easy, just pop it in the oven and heat until golden on top. Serve with a salad or steamed veggies.
Roast Pumpkin, with green beans and chickpeas is a delicious combination for this yellow curry. It has Pumpkin, fresh lime and chillies and Kaffir lime leaves from our Kitchen Garden and is perfect served with jasmine or brown rice.
We use free range chicken breast, seasonal veggies and a combination of delicious shortcrust and puff pastry to make our pies. They are slightly creamy and full of flavour. Enjoy them by themselves or serve them with potatoes and greens.
Homegrown Pumpkins roasted with sautéed garlic, shallots and thyme are layered between lasagne sheets with cream fraiche, parmesan, brown butter and homegrown sage and finished with mozzarella. This lasagne is so tasty and delicious. Serve it with a garden salad or steamed veggies.
18 hour slow cooked beef brisket is what makes these pies so special. The meat is so tender and the flavour is perfect with the seasonal mushrooms. Just pop them in the oven from frozen and while they are cooking whip up some mash potato and steam vegetables.
Roasted Eggplant, Lamb Mince, Spices and Herbs are the key ingredients of this dish. It's finished with a mix of greek yoghurt. free range eggs, parmesan and feta. It's tasty and delicious and perfect with a seasonal salad.
Using seasonal spinach and fresh ricotta along with our own free range eggs, our lasagne and it is the perfect vegetarian meal. It's full of flavour and goes well with a seasonal salad or steamed vegetables.
Sides
Our Creamy Mash Potato with homegrown chives and parmesan is the perfect side to have with our Chicken Coq a Vin or the Italian Chicken.
Our Creamy Potato Bake is the perfect accompaniment for chicken, beef or even fish. We use Sebago potatoes, parmesan and cream and it's finished with mozzarella. Just pop it in the oven to heat through and serve.

What great way to start the day with our delicious homemade crunchy Macadamia and Maple Granola. It is full of macadamia nuts and seeds, with the maple syrup and almond oil adding the perfect flavour to the mix. Serve with yoghurt and seasonal fruit.
This mixed berry and rhubarb jam is so vibrant and uses only the best seasonal berries and fruit. It is perfect for breakfast with fresh sourdough or for a mid morning snack.
Using fresh seasonal berries, vanilla extract, homegrown lemons, sugar and apple stock, this jam is delicious with toast, crumpets and cakes.
This Homemade Granola is packed full of goodies with a mixture of seeds and nuts, raw honey, coconut oil, cacao and cinnamon. It's delicious served with yoghurt and poached fruit or berries.
