Chicken Guanciale Braise

What is Guanciale and why is it sooo good in this chicken dish? Guanciale is cured pork cheek, that is a rich, fatty piece of meat that is salty, sweet and meaty. Guanciale is mainly found in Italian dishes from central Italy in areas such as Umbria and Lazio. In this dish we cook out the Guanciale until it's crispy, remove from the pot, and then return to the finished chicken braise to maximise its lovely flavor. Enjoy with our fresh pasta, gnocchi or crusty sourdough.

Preparation and storage notes

Place into a microwave container and heat on high for 2-3 minutes, or until hot through. Toss through cooked pasta / gnocchi or enjoy with sour dough. Finish with grated Pecorino.
