MEAT & SEAFOOD MAINS
Classic comfort food dish. Lamb shank is slow cooked with vegetable soffritto, red wine, fresh herbs & tomato until fall off the bone tender & served with a side of buttery mash potato & greens.
Take me back to the south of France... but with a twist. Fresh salmon with a traditional salad from Nice. Steamed green beans & potato with soft boiled egg, tomato, olives & anchovy fillets with a side of red wine & dijon vinaigrette.
Rustic hunter- style stew of chicken. Slow cooked with red wine, tomato, mushroom, garlic, onion, capsicum, olives, parsley & thyme. Enjoy with a side of parmesan polenta, rice or pasta. This serves 2 people.
You had me at PIE, great anytime of the year. Fresh barramundi pieces are cooked in a creamy white wine & vegetable sauce & topped with a flaky puff pastry lid. Delicious on its own, or add a simple side salad.
Fresh & zingy just how a curry should be. Tender pieces of free range chicken in bold green curry paste packed with coriander, ginger, lime, green chilli & spices mellowed out with cream coconut cream.

A comforting & delicious fish stew with classic Spanish flavours. I use a fresh barramundi portion in each serve with green olives, chickpeas, potato, tomato & lots of garlic & smoky paprika to make you feel like you are by the sea in Spain. Enjoy with crusty bread to mop all the goodness.
Next level comfort food. It's no wonder its always a popular choice at the dinner table. Beef mince & vegetables are slow cooked in homemade beef stock & spices & then topped with a buttery cheesy mash potato lid. Yum!

The ultimate in comfort food, need I say another word. Slow cooked beef bolognese layered with fresh pasta sheet, creamy bechamel sauce & lots of mozzarella & parmesan cheese. Small serves 2 & large serves 6-8 people.
VEGETARIAN MAINS
Fresh broccoli is shaved then tossed with cranberries, pecans, pepita seeds, orange zest & pickled Spanish onion. Served with a simple citrus vinaigrette on the side.
What's not to love about this molten cheesy goodness? The buttery bechamel is loaded up with 4 different types of cheeses & folded through the el dente macaroni pasta, then topped with more cheese & panko crumbs.
All the smoky campfire flavours of slow cooked chipotle chilli beans in adobe sauce, packed with capsicum, sweet potato, carrot & corn. Great as a Mexican bowl / tacos / nachos/ burrito or simply mopped up with crusty bread.
My take on Spanakopita (a Greek Silver beet & feta filo pastry pie. ) Onions & garlic are sauteed with fresh silver beet & spinach then folded into creamy ricotta & Greek feta cheese. Laced with fresh dill, toasted pine nuts & nutmeg before being tucked into filo pastry & finished with olive oil & sesame seeds. The result is the lightest most crisp pie ever. Perfect on its own or with a side salad.

BROTHS & SOUPS
Smoked ham hocks from my butcher Trevor are simmered with vegetables to make a rich stock with dried & fresh peas & finished with a little cream. I blitz the soup for a smooth texture & add the shredded ham hock on top. Perfect on its own or with a bit of toast.
A nourishing lentil & vegetable soup. Perfect on its own or with some crusty bread.
A BIT ON THE SIDE
Parmesan polenta is a terrific side dish to have with chicken cacciatore, or as a base for bolognese sauce or steamed greens.
Buttery mash potato & slightly steamed seasonal greens. Ready for you as a healthy side dish.
Who doesn't love mash? Great as a side dish or just on its own.
Fluffy basmati rice, lower GI than all the others. Perfect to have with curries.
SNACKS
Sicilian "sweet & sour" vegetables. Delicious on bruschetta / baby gem lettuce to serve with drinks. Toss through pasta either hot or cold. Serve with fish, chicken, pork or beef. Freezes well so great to have on standby when guests pop in.
Get the party started with these tasty rolls. Great to have on stand by in the freeze, just bake from frozen for 30 minutes.
Delicious with crackers & raw vegetables. Or use as a sauce for pasta, dollop on vegetables, fish or chicken.
Roasted red peppers are whipped up with feta & ricotta cheese & a hint of chilli & smokey paprika. Addictive with crackers or spoon over fish, chicken & vegetables.
