Preparation and storage notes

If frozen, defrost in the fridge (allow 24–36 hours depending on size).

From defrosted/chilled:
• Preheat oven to 170–180°C (fan forced).
• Place turkey in a small roasting dish and brush with a little butter or oil if desired.
• Warm for 20–30 minutes (smaller roast) or 30–40 minutes (larger roast) until the centre is hot and the outside is lightly golden.
• Rest for 10–15 minutes, then slice across the grain and serve with cranberry sauce.
