Southern Thai curry of free-range pork, snake beans, star anise and baby corn

This yellow curry is gently spiced and incredibly aromatic. The paste is crafted in-house with fresh turmeric, lemongrass, galangal and dried chilis, we roast these in oven to add depth and complexity. We poach premium Otway free-range pork in a coconut stock and add snake beans, sweet baby corn, and fresh Thai basil bring to elevate the color, texture, and brightness. Comforting, warming, and full of authentic southern Thai flavor — a beautiful balance of spice, sweetness and freshness.

Pork neck, Coconut Stock Massaman [Coconut Cream, Chicken stock, Fish sauce, Lemongrass, Brown sugar, Galangal], Coconut Cream, Snake beans, Yellow curry Paste [Red Onion, Water, Lemongrass, Galangal, Coriander root, Garlic peeled, Chipotle in adobo, Dried chilli, Turmeric, Cumin seeds, fennel seed, Coriander seed, Salt], Chilli/Onion for Massaman/Rendang braising [Red Onion, Long Red chilli], Tamarind paste (Sulphites), Thai basil, Palm sugar, Lime leaf, Star anise

Preparation and storage notes

To reheat

Defrost before heating. Microwave: Remove bag and heat in microwave in its tray for 2-3 minutes or until hot.
Decanter into a saucepan, stir occasionally on a medium heat for 7-10 minutes or until hot.
