Thai Pumpkin Laksa with Fried Chickpeas

This soup is full of so many great Thai flavours, and of course, lots of pumpkin – which yes, I promise pairs amazingly well with the Thai flavours going on here. Lots of ginger, a little soy sauce, coconut milk, pumpkin and just a small amount of peanut butter too.... And there are noodles involved too, AND it’s all totally HEALTHY. Triple, YES. (Ps we're going to use rice noodles to keep it gluten free...)

Vegetarian broth, Pumpkin, Coconut cream, Chickpeas, Broccolini, Rice noodles, Spring onion, Olive oil, soy sauce, Peanut butter, Fish sauce, Ginger, Sesame oil, Mint leaves, Garlic, Bird's eye chilli, Pomegranate, Brown sugar, Cinnamon, fresh coriander

CONTAINS: Fish, Peanut, Soy, Sesame.

Preparation and storage notes

1.Peel back corner of film.
2.Heat on high for 2-3 min or until heated through.
3.Let stand for 1 min.
4.Carefully pell off film completely from tray. Enjoy
