We have taken our Thai Chicken salad and turned it into a vegetarian and vegan friendly dish. It's light and fresh, and the dressing packs a good punch—not too spicey either! Fresh coriander scattered as garnish, can be picked off or requested not to have it. No coriander in the dressing.
