Who needs a trip to the doctors when you have this broth. It all starts with homemade chicken stock then layers of extra flavour with ginger, turmeric, seasonal fresh vegetable & rice.

So fresh & light with the zing of fresh green chilli, kaffir lime, lemongrass & special spice blend. Packed with organic soft tofu & seasonal vegetables, delicious with steamed rice.
Like Mum always said "Eat your Greens!" Luckily for me my Mum is a fabulous cook & I always cook my greens with a crunch. So this salad is seasonal greens of asparagus, broccoli, green beans, snow pea, baby peas, baby spinach & toasted pepita & sunflower seeds... with a simple side dressing of whipped tahini, xvoo,lemon & lime, garlic,sea salt & pepper. Perfect for a light lunch or side salad ( * greens may vary due to availability)
My sisters favourite, hailing from from the south of Italy. Layers of grilled eggplant, mozzarella & parmesan cheese in our signature chilli & garlic tomato sauce, and gluten free. Medium serves 2 or large serves 6-8 people.
The ultimate vegetarian pasta, packed with nutrients. Begins with a medley of mushrooms ... porcini, portobello, shiitake & button are roasted in butter & EVOO with garlic, lemon thyme. Then added to sauteed garlic, porcini stock, white wine, cream lots of cracked black pepper & finished with shaved parmesan & fresh parsley.
Its time to eat the rainbow folks. I can't think of a better way than all your favourite vegetables layered with silky soft fresh pasta sheets, fresh ricotta cheese, tomato napoli sauce & creamy bechamel.
My take on Spanakopita (a Greek Silver beet & feta filo pastry pie. ) Onions & garlic are sauteed with fresh silver beet & spinach then folded into creamy ricotta & Greek feta cheese. Laced with fresh dill, toasted pine nuts & nutmeg before being tucked into filo pastry & finished with olive oil & sesame seeds. The result is the lightest most crisp pie ever. Perfect on its own or with a side salad.
Vegetarian favourite in our home. Fresh spinach & creamy ricotta rolled into soft pasta sheets & tucked in with tomato & basil sauce & topped with parmesan & mozzarella cheeses.
Eggplant & chickpeas are simmered in a tangy tomato & coconut curry sauce with fresh curry leaves & too many spices to list. Trust me its a beautiful vegan curry.

Chicken is marinated overnight in our tandoori spice blend then grilled & served with steamed basmati rice with peas, mint & cucumber yoghurt , grilled shallot & corn.
Fresh barramundi is gently poached in an exotic Thai yellow curry paste with coconut cream, fresh asian green vegetables & potato. Best served with a side of steamed rice.
Fresh & zingy just how a curry should be. Tender pieces of free range chicken in bold green curry paste packed with coriander, ginger, lime, green chilli & spices mellowed out with cream coconut cream. This small serves 2 people.
Take me back to the south of France... but with a twist. Fresh salmon with a traditional salad from Nice. Steamed green beans & potato with soft boiled egg, tomato, olives & anchovy fillets with a side of red wine & dijon vinaigrette.

A BIT ON THE SIDE
Parmesan polenta is a terrific side dish to have with chicken cacciatore, or as a base for bolognese sauce or steamed greens.
Fluffy basmati rice, lower GI than all the others. Perfect to have with curries.

SWEETIES
A good old fashioned pudding ... sticky sweet goodness. Comes with butterscotch sauce, but if you want to go next level add a scoop of vanilla ice cream. This serves two people.
We all need a little "pick me up" somedays. That's exactly what this iconic dessert does. Sponge finger biscuits are dunked into strong expresso coffee, with a lick of masala & layered with whipped cream & mascarpone & dusted off with cocoa. Perfect way to finish a meal.
