I have borrowed this recipe from my favourite chef, Ottolenghi, and it is a firm family favourite. We serve it with a side of housemade pickled onions. Delicious served with flatbread or salad, rice or veg.

Chicken Thigh, Pickled onions (onion, sugar, salt, vinegar), Lemon zest and juice, Olive Oil, Ginger, Sumac, Cardamom, Garlic, Salt, Cumin, Paprika, Sweet, Ras el hanout, Pepper, Turmeric, Fresh herbs

Preparation and storage notes

Keep refrigerated and use within 3 days. Can be frozen. Reheat covered in preheated oven or in microwave
