Ginger Rice Pudding with Honey & Walnut Roasted Seasonal Fruit

Remember Grandma's rice pudding, it's a huge bowl of comfort and I am craving a little bowl of this, this week! Our rice is slow-cooked in the Monster (affectionate name for our very hot running gas oven) which allows the ginger and spices to infuse into the sweet milk custard. Slightly caramelized around the edges, we then pair it with the best season's fruit. It really is a little bowl of comfort.

Preparation and storage notes

Enjoy hot or cold. To re-heat:
OVEN: Pre heat oven 160c,remove lid, gently re-heat until at desired temperature.
MICROWAVE: Crack lid, microwave 1 min (small) 3mins(medium) on high, allow to stand 2 mins before serving.
