Welcome to Dinner on Trirvandrum Express. For this journey we head back to Kerala to showcase some more jewels of the Kerala cuisine. The spices are beautiful, balanced and have a kick to it it too. Pongal is a South Indian institution and is made from cooking rice and lentils together with spices and clarified butter in this case. Decadent and comfort food at its best this dish is a childhood favourite and popular in all over Tamil Nadu. I will be adding some curd chilli separately on the side, which is hot!
