A bit about me...I grew up eating Armenian and Egyptian food in my grandparents’ home and both my dad and my grandpa cooked in French restaurants as chefs, so there was always a great mix of food on our table at home! 


I love to cook Middle Eastern food using the best local produce, to give it an Australian accent. Hummus has become an Australian staple, but in the Middle East hummus isn’t just a dip, it's a meal. And this version isn’t just any meal – it’s luxed up with shellfish and given complex layers of flavour with spices and my toum (Lebanese garlic sauce).


I’ve done a lot of on-the-ground research all over the Middle East on hummus. It’s taken years to refine this recipe that takes 3 days to make super smooth and creamy. 


My girlfriend is Lebanese, and I took a plate of my hummus to her parents' home the first time I met them. I think it’s fair to say it was the hummus that won them over!
