Happy New Year! We’re celebrating LNY with this very special pineapple tart. The preparation of the roasted pineapple is inspired by the famous Tipsy Cake dessert from Gareth's days as Head Pastry Chef at Dinner by Heston Blumenthal.
Caramelised wedges of pineapple are baked into a moist almond frangipane and topped with a caramel glaze.
