Rustica Sourdough

Prepared using a traditional sourdough method; a three-day, time-honoured baking process that allows ingredients to fully mature ensuring an enhanced flavour. All breads are kneaded and moulded by hand, before being allowed to rest overnight, then baked fresh each morning.

Established in 2012 by renowned Baker, Brenton Lang, Rustica delivers artisan breads and pastries baked using traditional sourdough techniques. From savoury croissants, to delicious espresso tarts, and our ever-popular range of donuts and crullers, everything at Rustica is prepared, baked or cooked on site at South Yarra’s flagship venue which also doubles as a popular café seven days a week.

With a commitment to conscious consumption and fair business practices, we are proud to work closely with suppliers, all of which share an ongoing commitment to supporting local small-scale farmers with a consideration for environmental sustainability.
