Southern Baked Chicken (Gluten Free)

When I visited Austin Texas, I was blown away by the food. The BBQ was incredible and so different to what we grill here on our BBQ's in Australia. I loved the sides too like corn breads, collard greens, creamy vegetable casseroles and the beans! But my oh my was I blown away by the southern fried chicken! A bucket of KFC pieces with grilled corn was my Dad's favourite take away when we were growing up and always a special treat. But the versions I had in Texas were next level! What surprised me the most was how they didn't taste deep fried. It was so much lighter than the versions I recalled from growing up - you could taste the subtle spices too! These days, when I get a Southern chicken craving my go to is actually this baked version. Served with a creamy broccoli cheese and steamed corn. Finger licking good! ;)

Preparation and storage notes

Remove from packaging before heating. If frozen, 7 mins in an air fryer at 200C, otherwise heat in oven at 180 degrees Celsius for 10 mins. If thawed, reduce cook time to 5 mins in the air fryer and 10 mins in the oven.
