Thai Green Chicken Curry with Rice

The last time we made this we got rave reviews “omg! The curry was amazing”, and “The kids licked the plates clean!”. This vibrant curry is made all the more authentic with the addition of lemongrass, makrut lime leaves and eggplants from our garden. Cheaper than takeout, freshly made with local farm produce, let us cook your dinner! This is a single serve with rice, frozen so you can pop it in the freezer and then enjoy it whenever suits you!

Preparation and storage notes

If thawed microwave for 3 mins on high, stir and then repeat for another 30 seconds. If frozen, microwave on high for 5 mins, stir then repeat for another 2.5 mins. Stir well and serve when well heated through.
