Bacon is cooked first and used to give a deep flavour to the base, then the fresh corn AND corn cobs go into the broth to give a bang of corn flavour. Potato is then added to thicken the soup and it is just a warm bowl of summery yellow corn that warms you up inside!

Preparation and storage notes

Keeps up to 5 days in the fridge, or 3 months in the freezer. Microwave: If frozen, cook for 5 mins on high. If thawed cook for 2 minutes. Heat for an additional 30 seconds at a time as needed until cooked to your preferred temperature for eating. If it seems a little thick, loosen with water.
