Roast vegetable medley with cashews

Vegetables that have been roasted with olive oil, garlic and rosemary giving a delicious sweet caramelised flavour. We then toss with cashews and a balsamic glaze. A great side or even main dish and is even better after a couple of days.

Sweet potato, Red Onion, Carrot, Zucchini, Tomato, eggplant, Red Capscium, Raw Cashews, Balsamic Vinegar, Spinach, Fresh herbs, Garlic, Rosemary.
Preparation and storage notes
Keep refrigerated and use within 4 days. Serve room temperature or cold or can be reheated
