Grilled Pumpkin, Fried onion, Maple & Mint

Pumpkin slices are grilled on the barbecue then topped with the maple fried onions and fresh mint. Serve as a vegetarian main with some other sides to make it a meal, or as a side dish. This recipe is adapted from Very Good Salads by Shuki Rosenboim & Louisa Allen.

Butternut pumpkin, Red onion, Maple syrup, Red wine vinegar, Extra virgin olive oil, Sea salt, Mint

Preparation and storage notes

Transfer to a heat proof dish and warm in the oven at 160C for 10 mins or until warm. You can also enjoy this cold as a side salad. Top with fresh mint.
