This is my freezer-friendly interpretation of what I believe to be the greatest lemon tart in the world — Heston Blumenthal’s. While Heston’s silky custard-based tart doesn’t survive the freezer, mine takes a different path: a curd-based filling enriched with cream and set with gelatin, nestled in crisp sable pastry.
