Duck
Introducing our Duck Cassoulet, a French classic with tender confit duck legs, pork belly, pork sausage, creamy white beans, and vegetables. Rich, hearty, and full of comforting flavors, this dish brings the taste of the French countryside to your table. Premium item- 2 very very hearty serves. More images to come.
this classic French preparation, duck legs are cured overnight before being submerged in duck fat and gently cooked until silky and tender.
Salads
This is another one of my special menu items that the credit has to go to another chef, in this case George Calombaris. Delicious nutty, this grain salad will have your guest thinking that food can be health and tasty at the same time. it has a yoghurt dressing and will serve 8 adults
This is going to be a CotC Potato Salad. Rich and creamy this Potato Salad has bacon, eggs, celery, herbs and a home made mayonnaise dressing.This is going to a fresh item, and will have a 4 day shelf life. Just in time for easter. 1.2 kg, enough for 6 to 8 adults as a side item
Sides
Creamy, cheesy and the perfect base for so many meals, our Polenta & Parmesan Mash is a twist on the traditional mash base. Goes brilliantly with braised meat dishes. 375g (serves 2 adults)
Delicious French Style "heart attack" mash is the buttery, creamy mash potatoes you usually only find in French Restaurants the perfect accompaniment to so many CoTC dishes, our mash is two generous serves. 400g serves 2 adults
Macaroni and cheese is the classic comfort food made from elbow macaroni pasta and a creamy cheese sauce. Our Mac & Cheese is made from a combination of cheddar, gruyere, mozzarella, parmesan and Colby cheeses and topped with a crumb crust. Served as a side or main dish. 650g (two main serves or 4 side serves)
Also known as Dauphinoise Potatoes, this French classic is adapted from a Julia Child’s recipe. With layers upon layers of finely sliced potatoes baked in, cream, butter and cheese with a hint of fresh thyme, it’s luxurious and thoroughly indulgent. 2 adult serves

This Salted Caramel Chocolate Tart has a shortcrust base, with a velvety smooth salted caramel, and finally a rich chocolate ganache.
Lets make the most of seasonal fruit with this tasty Pear and Pistachio Tart... made with our buttery tart shell, pears poached in vanilla, and pistachio cream filling.. this tart is delicate but delicious. 2 slices per pack. 250g.
An American classic. Our Pecan Pie has glorious nutty pecans, and a caramely-custdy filling. Traditional served at Thanksgiving, this is the CotC version perfect any time of year! 2 slice pack.
This is a CotC interpretation of the blueberry cheesecake by Darren McGrady. A former Royal Chef. This is blend of cottage cheese, Greek yogurt, and cream cheese for the perfect tangy twist. Topped with a luscious blueberry glaze, it's a creamy and refreshing dessert that's as satisfying as it is indulgent.
