Thai red curry corn fritters
These fritters are seriously addictive like red curry pop corn. They are my vegetarian take on Thai fish cakes. They come with house made cucumber pickle and deep fried Thai basil.

Ingredients
frozen corn kernels, Vegetable oil, Water, Thai cucumber pickles (Rice vinegar, Water, Sugar, Continental cucumber, Red onion, frozen red chillies, fresh coriander), Rice flour, Under the Pickle Tree Red Curry Paste (onion, garlic, ginger, lemongrass, shrimp paste, fish sauce, sugar , lime juice, spices and citric acid (330)), fresh egg, Kaffir lime, Thai Basil, Powder baking.
Preparation and storage notes
Reheat the fritters in a hot pan on the stove or on a tray in the oven. Dip in sweet chilli sauce and eat immediately. They are also great wrapped in a lettuce leaf!
