Cauliflower Massaman
Massaman Curry was introduced to Thailand by Persian merchants and has a heady mix of spices that include cassia, cloves, cardamom and more. It is the perfect family friendly curry and is traditionally done with slow cooked beef. Here I am using roast cauli instead of beef a vegetable robust enough to soak up the rich flavours.

Coconut milk (tetrapack), Vegetable stock, Potato, Cauliflower, Under the Pickle Tree Massaman Curry Paste (Onion, garlic, lemongrass, ginger, tamarind, brown sugar, spices and citric acid (330)), Vegetable oil, Deep Fried Shallots, Cashew nuts, Orange peel, Coriander root and stem, Cinnamon stick, Star anise.
