Roasted butternut squash with couscous and sweet dried cranberries with lots of fresh mint and shallots. Vegan but also just a great side with meat or seafood. Serve hot or chilled.

Ingredients
Pumpkin, Couscous, pistachios, Mint, Dried cranberries, Olive oil, Red wine vinegar, Shallot, Salt, Pepper, Spices.
Preparation and storage notes
Keep refrigerated until ready to eat. Remove from the fridge 10-15 minutes before serving. Toss well and serve. Consume within 3 days of delivery.
