Mango and Macadamia Tart
We're huge (I mean huge) fans of the mango Weiss Bar here at Tarts Anon and this is simply an ode to that delectable ice-cream. The bottom layer is a rich and creamy macadamia custard, the top layer is a fruity and smooth mango custard and together, they are greater than the sum of their tarts.

Shortcrust pastry (Flour, Butter, Water, Salt), Macadamia Infusion (Cream, Macadamia), Mango Custard (Mango purée, Egg yolk, Double cream, Sugar, Cream, Whole Egg, Citric acid), Macadamia Glaze (Macadamia infusion, Golden caster sugar, Pectin X58, Salt).
