Thai Yellow Chickpea and Vegetable Curry
This is a beautiful aromatic Thai yellow vegetable curry with a mild level of heat. It is made with protein-rich chickpeas and delicious veg such as potatoes, cauliflower, broccoli and peas. It is such a treat during the week as well as being perfect for sharing with friends on a Friday or Saturday night. This fragrant curry is lovely served with rice or quinoa power salad. Serve with roti or naan bread for a super weekend feast.
