Raspberry and White Chocolate Muffins
These delicious and versatile muffins can be used for morning tea treats and brunches, to fill lunchboxes or serve as a quick dessert with yoghurt and berry compote. Serve dusted with additional icing sugar. These are lovely served warm. Microwave for 15-20 seconds. Also lovely served with yoghurt. To turn these muffins into an easy dessert, serve with yoghurt and a berry compote.
Ingredients
Self-raising flour, Buttermilk, Caster sugar, Butter, Frozen raspberries, White chocolate chips, Egg, Vanilla extract.
Preparation and storage notes
Serve at room temperature or zap in the microwave for a few seconds to enjoy warm. Freeze: The muffins are suitable for freezing, for up to 3 months.
