Once cooled, the grains are folded through with roasted almonds, heaps of fresh mint and parsley, and finely chopped preserved lemon for that unmistakable citrus lift. The hero, though, is the barberry dressing. Tart, jewel-like barberries are simmered to release their ruby-red syrup, whisked with olive oil and lemon to create a zingy, aromatic dressing that ties everything together.
