Seven Vegetables with Moroccan Couscous
The preparation of this dish is a lengthy process, one which lends itself beautifully to discovering the lives of those we cook it with. This dish has allowed me to discover, observe and interrogate my own assumptions of many extraordinary women. We include it here for you to experience in some way that provenance of this dish. Traditionally served with lamb, yet on a bed of couscous it holds its own as a main meal. The couscous is included and served separately (contains almonds and walnuts). * Please say in the notes if you would prefer rice instead of couscous.
