Our signature spent coffee & toasted koji bun. Developed to utilise spent coffee grounds from our espresso offering, we mill the grounds with honey, unrefined sugar, butter and organic sunflower oil before finally folding with dark-roasted barley koji. The butter is spread liberally between sheets of our shokupan dough and rolled up. Baked to retain softness and brushed with an espresso syrup to finish.

A pack of six of our signature fruit mince pies. Our pies are made up of organic vine fruit and house-candied citrus soaked in an apricot & peach shrub, whisky and cultured butter. Studded with prunes, apples, warming fresh ginger and our house spice blend, and encased in an ultra-thin, lightly flaky shortcrust. A classic dark and chewy Italian Panforte, ours are made with house-candied oranges, sour cherries, dried fig, 70% Dominican chocolate from Melbourne based chocolaterie Hunted & Gathered and bound with our our favourite Tasmanian leatherwood honey. They’re studded with whole roasted almonds and hazelnuts and gently spiced with freshly ground toasted cinnamon & pepper blend. Each Panforte comes wrapped in Monforte wrapping paper making a perfect gift and are available for pick up only from the bakery. Panfortes are 650g each / 21.5cm x 9cm and serve 6+ generously; as the name suggests, the cakes are forte! and a little goes a long way. Best stored at room temperature and eaten within four months.
