This is an absolute delight, roasted eggplants that are stuffed with aromatics and marinated in tempered fenugreek seeded cooked in mustard oil.

Eggplant, Mustard oil, coriander, Cumin seeds, Fenugreek seeds.
Preparation and storage notes
Store in the refrigerator below 4 degrees celsius and consume within 4 days. If freezing, remove from packaging and store in a freezer safe container or ziplock and consume within 1 month. Reheat in the microwave for 3 minutes and dig in!
