Prawn Linguine with Blistered Cherry Tomato, Rocket & Chilli
Fresh hand-made linguine, marinated prawns with a blistered cherry tomato sauce. Finished with a hit of chilli and fresh rocket. Just delicious and a fresh no-fuss dinner with a touch of 'wow"
Ingredients
Tomato Sauce (Cherry tomatoes, Confit garlic oil, Lemon juice, Lemon zest), Garlic Chilli Oil (Garlic, Olive oil, Birds eye chilli), Linguine pasta, Prawns, Rocket leaves.
Preparation and storage notes
STORAE: keep refrigerated COOK: Bring a large pot water to the boil, add 1 tbsp oil and a pinch of salt. Tip in raw pasta and simmer for 2 minutes then drain. Use a large fry-pan and bring to a high heat, lay out prawns and sear for 1 minute, turn prawns and pour tomato sauce over prawns. Cook for 2-3 minutes till hot and simmering. Slice the whole bunch of rocket (stalks and all) into 3cm slices and toss through sauce with the cooked pasta. Divide into two serving bowls and enjoy hot.
