Butterflied Greek Chicken with Tzatziki
Butterflied and skewered chicken, brined to preserve all the moisture and marinated in sumac, fresh herbs, garlic, lemon and chilli. Ready for the grill or BBQ and perfect with any or all of the sides on offer.
Ingredients
Chicken, Brine (Water, Ice, Rock salt, Sugar), Tzatziki (Yoghurt, Cucumber, Lemon juice, Mint, Garlic, Salt, Pepper, Dried oregano), Chilli banana, Lemon rind, Rosemary, Dried oregano, Sumac, Garlic, Confit garlic oil.
Preparation and storage notes
STORAGE: keep in fridge COOKING INSTRUCTIONS: BBQ: Remove chicken from bag. Heat on BBQ to medium flame. Season chicken with salt & pepper then lay on BBQ. Drop the lid down and BBQ for 10 minutes each side. Rest for 10 minutes with BBQ off and lid down. Remove skewers and serve with tzatiki provided. OVEN: Sear chicken on both sides in a frypan. Place on an oven tray with a little extra olive oil and bake 180c for 30-40 mins.
