Spinach & Ricotta Dumplings

Straight from my great friend, the incredibly talented Lisa Goldberg (Monday Morning Cooking Club). A delicious combination of light ricotta and spinach dumplings known as "Gnudi" covered in a freshly simmered cherry tomato sauce topped with grated parmesan. This meal is lovely, light and truly delicious and lends itself to a pairing of fresh garden salad.
