Veggie Packed Meatball Tray Bake with Penne Pasta
Nothing beats it for an easy mid week dinner. It’s packed with lean mince, fresh veggies, carbs (for the kids) and gooey cheese. I’m not sure what I used to do before the humble tray bake, but it can’t have been as easy or as yummy. Everything arrives in the one pan and the oven works it’s magic for a mere 30-40 minutes to deliver caramelized, melty goodness. If you’re not feeding the troops it’s also a great one to package up into portions and freeze for the weeks ahead.
