A sweet potato and chickpea stew, finished with baby spinach, coriander and toasted chopped peanuts. Great on top of rice or cous cous. Warning – a bit spicy!

Vegetable stock (Home-made), Tinned tomato, Chickpea Tinned, Red capsicum, Red onion, Sweet potato, Peanut Butter, Baby spinach leaves, Roasted peanuts, Extra virgin olive oil, Cornflour (GF), Pickled Jalapeno, Fresh Coriander, Garlic, Ground ginger, Chilli powder, Salt, Black pepper.
Preparation and storage notes
Keep refrigerated below 5 degrees Celsius. Re-heat to above 75 degrees Celsius.
