All great cheese starts with good quality fresh milk, and it’s certainly no coincidence that the exceptional quality of this very special English Stilton begins with the use of Certified organic milk. Traditionally produced for Will using hand ladled curds gently set with animal rennet, the surface of each young cheese is carefully “rubbed up” by hand the old-fashioned way. This encourages a natural crusty rind to form as the cheese matures in humidity-controlled cellars. After needling and ripening in the cellars for at least two months, each unique hand ladled Stilton is carefully selected for its deliciously moist creamy texture and salty blue syrupy finish.

It is becoming increasingly difficult to find English Farmstead Cheddar matured the traditional way under cheesecloth. Changes in EU regulations over the control of naturally occurring cheese mite, as well as vacuum packing and modern “quickie” sweet helvetica starters have encouraged many dairies to switch to less labour-intensive production maturation methods in recent years. This Farmhouse Cheddar is one of the rare exceptions. It is hand made on the farm in the rolling green hills of the West Country and, after grading, is carefully matured under cloth for 24 months. The cloth wrap provides a natural protection for the cheese, and also allows the rind to breathe and release moisture. The result is a classic Cheddar bursting with evocative flavours, with a firm, open and moist texture, an aging earthy aroma, and a lingering tang.

Every batch is different and influenced by when the cheese was made, and where and how it was ripened. La Couronne Fort Aged Comté PDO is matured in the damp underground cellars of Marcel Petite at Fort Saint Antoine, high in the mountains that border France and Switzerland in the Franch- Comté. It is specially selected to wear the prestigious red ‘crown’ of quality on the basis of its rich concentrated nutty texture, elegant caramel sweetness, and lingering kaleidoscope of flavours – rather than on how long it was aged.
