Whole Chicken, Orange, Brown sugar, Ground ginger, Nutmeg, Cinnamon, Cloves, Salt

Preparation and storage notes

FROM RAW - On a tray, roast at 220 degrees on fan forced for 20 minutes, then turn down to 160 degrees (fan) for another 20 - you can tell when it's done if the juices run clear when pierced at the knuckle. (If you scream "OW!" then you've pierced the wrong knuckle.) FROM COOKED - Heat at 180 for 25-30.
