Lemony Roasted Fennel, Radichio & Root Vegetables

Why is Radichio so bitter? Perhaps it yearns for carefree days spent down at the fishing hole with dappled sunlight on shoeless feet and knees that don't creak, or maybe its simply naturally occurring chemical compounds released when the vegetable is cut or chewed. We'll never really know.. I've paired this with roasted fennel, parsnip, sweet potato and shallots with a herb dressing because I love you. Suitable as a generous side or a vegetarian main, comes in two sizes, one is smaller than the other.

Ingredients

Sweet potato, Parsnip, Red Onion, Radicchio, Chives, Fennel, Dijon Dressing [Extra virgin olive oil, Wine vinegar, Our Honey, Dijon Mustard, Raw Sugar], Extra virgin olive oil, Basil, Garlic, Thyme

Preparation and storage notes

Reheat in oven (200 for 12 -15) or stovetop. Drizzle with dressing prior to serving. Exclaim in delight and try not to act surprised.
